I want to deploy my app under many versions of Mac OS and architectures linek 10.3,10.4 and 10.5 and ppc and intel.
Nom I'm on Tiger 10.4 PPC and I'm using XCode.
Can anyone tell me how to do.

depends on your xcode version. on 3.0, and if i recall correctly 2.4 as well:
project->edit project settings
that's where you got your options. toward the bottom: cross-develop using Target SDK:
